Ingredients
- 1 pound lean turkey sausage
- 1 bag (19 ounces) frozen cheese tortellini
- 3 cups baby spinach leaves
- 1 can (14.5 ounces, each) diced tomatoes, drained
- 3 ½ cups chicken broth
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon Italian seasoning
- 1 block (8 ounces) cream cheese, cubed
- 1 cup shredded Mozzarella cheese
Instructions:
- Add sausage crumbles and garlic to a large pot and cook for 1 minute.
- Stir in broth, water and tomatoes and bring to a boil.
- Add tortellini and cook for 6-7 minutes.
- Reduce heat to low and add spinach, basil, salt and pepper. Cook for a few more minutes and serve warm with shredded Parmesan cheese on top.
