Air Fryer Baked Potatoes


Ingredients:

3-5 Idaho or Russet Potatoes
Olive oil
Salt

Instructions

  • Wash and dry potatoes then rub with olive oil and salt. Prick outside of potatoes with a fork.
  • Place potatoes in the basket of the air fryer. Set temperature to 400 degrees and cook the potatoes for 30 minutes. Pierce with a fork to test. If the fork does not smoothly go through the potato, cook for an additional 5-8 minutes until done.

Southwest Steak Nuggets


Ingredients
:
1 quart oil for frying
2 Lbs steak cubed
2 Cups flour
1 tsp salt
1 tsp pepper
1/2 tsp garlic powder
1/4 tsp ground Cayenne Pepper
1/4 Cup milk
1 egg
Sweet Baby Ray’s BBQ sauce for dipping or ranch

Directions:
1. Cut and season the steak with salt, pepper, garlic powder, and cayenne pepper in a gallon size zip lock bag and let sit for 30min.
2. Heat oil in a deep fryer to 365 degrees F
3. In a bowl beat egg and milk and pour into the steak bag
4. In another bowl or bag. Mix the flour, with some additional salt and pepper.
5. Combine the steak and dry ingredients shake until fully coated.
6. In the hot oil, fry the coated steak pieces in small batches until golden brown, about 5 minutes. Drain on paper towels.

Stuffed Chicken Parmesan


Ingredients

  • 6 thin chicken breasts (you can pound it down if they're a little thicker)
  • 4 oz cream cheese softened
  • 10 oz spinach frozen, thawed and drained, chopped or cook fresh spinach in a pan with oil until wilted.
  • 1 1/2 cups Mozzarella cheese shredded, divided
  • 6 tbsp Parmesan cheese grated, divided
  • 1 egg beaten
  • 10 RITZ Crackers crushed
  • Pasta sauce (your favorite, warmed up)

Instructions 

  • Preheat oven to 375.
  • In a medium bowl, combine cream cheese, spinach, 3 TB of Parmesan cheese,and 1 cup of the Mozzarella Cheese. Mix well and set aside.
  • Place cracker crumbs and the rest of the grated Parmesan cheese in a shallow dish and the beaten egg in a bowl. Set aside.
  • Spread cheese and spinach mixture onto chicken breast and roll up chicken tightly. Secure with a toothpick.
  • Roll chicken bundle in egg and then in crumbs and cheese dish and evenly coat.
  • Place chicken seam down in a greased 9x13 dish. Spray with cooking spray and bake for 30 minutes. Remove toothpick before serving and top with warm pasta sauce and remainder Mozzarella cheese over noodles.

Hamburger Casserole

 


Ingredients

  • 1 lb ground beef
  • 1 can cream of chicken mushroom soup or cream of mushroom soup
  • 1 (15oz) can tomato sauce
  • 1 can whole kernel corn drained
  • 1 tsp chili powder
  • 2 tsp Italian seasoning
  • 1 tsp garlic salt
  • pepper
  • 2 c macaroni noodles uncooked
  • 1 c grated cheddar cheese more, if needed, to cover the casserole

 

Instructions 

  • Preheat the oven to 350°F
  • Boil the macaroni according to the direction on the package and drain.
  • Use a large skillet to brown the ground beef. Add the chili powder, garlic salt and pepper to taste.
  • In a separate bowl, stir the cream of chicken mushroom soup, tomato sauce, and corn. Add it to the skillet with the hamburger.
  • Add the cooked pasta to the skillet and mix together.
  • Pour the mixture into a 9x13 inch baking pan. Bake for 35-40 minutes.
  • During the last 15 minutes of bake time sprinkle the grated cheese over the top and finish baking the casserole.
