Cheesy Bacon Stuffed Mini Peppers

Ingredients

6 mini sweet peppers, sliced in half, seeds and membranes removed

4 oz cream cheese

2 Tablespoons green onions,, sliced

4 slices bacon,, cooked and crumbled

1/2 teaspoon garlic powder

1/2 cup shredded cheddar cheese + extra for topping

1/2 teaspoon Worcestershire sauce



Instructions

  1. Preheat oven to 400 degrees. Spray a cookie sheet with nonstick cooking spray and set aside.
  2. In a small bowl, beat together the cream cheese, green onions, bacon, garlic powder, cheddar, and worcestershire sauce with an electric mixer until smooth.
  3. Fill the sliced peppers with the filling, about a heaping tablespoon each. Place on prepared cookie sheet, then sprinkle each pepper with a little extra cheese. Bake in the preheated oven for 10-12 minutes until cheese is melted and bubbly and peppers have softened.
  4. Allow to cool slightly before eating. Sprinkle with a little chopped cilantro if desired. Enjoy!

Best Oven Roasted Pork Loin


Pork brine (24hrs)

6 cups water

1/2 cup salt

1/2 cup brown sugar


Instruction

1. Add sugar and salt to hot water until dissolved then add ice to chill

2. Cut fat off the loin and add to the brine in a water cooler add more ice to stay chill for 24hrs.



INGREDIENTS

pork loin roast, 2-3lbs., boneless

1 tbs kosher salt

1 tbs Worcestershire sauce

1 tsp paprika

1 tsp onion powder

1 tsp garlic powder

1 tsp rosemary, dried and crushed

1  tsp black pepper, ground


INSTRUCTIONS

(Rinse brine and pat the loin dry)

  1. Mix all dry ingredients in a small bowl and set aside.
  2. Trim any excess fat from top of pork loin roast. Place roast a wire rack lined jelly roll pan coat with Worcestershire sauce, then with dry seasonings. Rub liberally on all sides of the pork.
  3. Cover with foil and let sit for 1hr to get to room temperature.
  4. Preheat oven to 425°(F). Line a sheet pan with aluminum foil, spray with a little non-stick cooking spray and set aside.
  5. Place seasoned pork roast, fat side up, on foil lined sheet pan and place in oven at 425°(F) for 15 minutes.
  6. After 15 minutes, reduce heat to 375°(F) and continue roasting for about 45 minutes or until internal temperature of the pork is 145°(F) at the center of the roast.

Gravy: 

2 TBS Butter

2 TBS Flour 

1 cup Chicken Broth

pan juices

In a sauce pan over medium heat, melt 2 tablespoons of butter and whisk with 2 tablespoons of flour, add the pan juices and 1 cup of chicken broth. Continue to whisk over medium heat to get any lumps out. Then reduce heat and simmer for about 5-10 minutes until sauce reduces. It will continue to thicken when removed from heat.

Mini Lemon Drop Cakes


Ingredients

1 cup all-purpose flour

1 cup sugar

1/2 tsp salt

1/2 tsp baking soda

1/2 cup butter

1/2 cup water

1/4 cup sour cream

1 whole egg

1 Tbsp fresh lemon zest

1 Tbsp fresh lemon juice


Lemon Glaze

1 1/2 cups powdered sugar

1 tsp fresh lemon zest

1 Tbsp butter, melted

2 Tbsp fresh lemon juice

2 Tbsp milk



Instructions

 

Spray mini muffin pans with non-stick spray; set aside. 


Whisk together flour, sugar, salt, and baking soda in a mixing bowl; set aside.


Melt butter in a small saucepan over medium heat. Add water and bring to a boil. 


Pour hot mixture over dry ingredients and beat with a hand beater till barely blended. Beat in the sour cream, egg, zest, and lemon juice till smooth.


Scoop batter into muffin pans. Bake at 325° for about 12 minutes. Let cool for 5 minutes, then turn onto cooling racks. Cool completely before glazing.


Dip lemon drops top side down into the glaze. Let excess glaze drip off into the bowl, then invert lemon drops bottom side down onto cooling racks. (Place waxed paper underneath the cooling racks for easier clean up.) Let sit till glaze hardens. 


Lemon Glaze:

Whisk all glaze ingredients together in a small mixing bowl. Heat for about 10 seconds in the microwave till glaze is very thin.

Baked Chicken Wings

 


INGREDIENTS

3 lb. chicken wings, split, tips removed
2 tablespoons butter, melted
2 teaspoons Diamond Crystal kosher salt (if using fine salt, you might want to use less)
½ teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon paprika (or smoked paprika)


INSTRUCTIONS

  • Preheat your oven to 400 degrees F. Line two rimmed baking sheets with foil and fit the baking sheets with wire racks.
  • If your chicken wings are whole, cut the tips off and separate the drumettes and the flats (here’s a good video that shows how to do that).
  • In a large bowl, toss the chicken wings with the melted butter.
  • Arrange the coated chicken wings in a single layer on the wire racks, not touching each other. Sprinkle them with salt, pepper, garlic powder, and paprika.
  • Bake the wings until they are cooked through to 165 degrees and their skin is browned and crisp around 25-35min.
